Our fee structure is customized to each project and the needs of each unique client. Unlike most consultants, our fee generally pays for itself through revenue being optimized as a result of our work or a reduction in expenses identified during our engagement.

Operational Assessment

Our first engagement often begins with a food and beverage operational “look under the hood” evaluation that occurs over the course of 30 days. A project based fee proposal is developed to reflect any specific client needs and takes the required resources needed necessary travel time into consideration. We will deliver a proposal with 48 hours of your call.

PROJECT BASED

There are often Projects that require a fresh set of eyes and a new perspective. Most often, these projects are initiated through a major sports architect firm and have a specific set of deliverables. These are generally short-term agreements with a schedule of deliverables and a lump sum fee-based structure.

Our request for proposal process follows the normal 3-6 month timeline but is anything but normal. Our unique process has been re-imagined to deliver results far beyond selecting a provider solely based on commissions and capital investment. This process is normally billed on a monthly based with an estimated time for completion.

RETAINER - YEAR ROUND

RETAINER - YEAR ROUND

We have many long-term multi-year clients that retain FSM to act in an owner's representative capacity to provide insight and experience on all things food and beverage. The scope of a retainer relationship varies based on the number of events, frequency of needed support, and location of venue. A lump sum monthly fee would be established often with a bank of time that can be consumed over the period of engagement.

We will provide an hourly fee structure as requested for clients that prefer to engage FSM on an as-need basis.
